"Cafe' de Paris" Butter

Ingredients:
- 1 pound unsalted butter -- softened
- 1 1/3 tablespoons garlic -- minced
- 1 teaspoon shallot -- minced
- 1 teaspoon capers
- 1 1/3 tablespoons anchovy paste
- 1 1/3 tablespoons Dijon mustard
- 1 1/3 tablespoons parsley -- minced
- 2/3 dash curry powder
- 1 teaspoon lemon juice
- 1 drop Tobasco
- 1 teaspoon Worcestershire sauce
- 1 ounce brandy
- 1 ounce Madeira
- 1 1/3 tablespoons Pernod
- 1 teaspoon rosemary -- minced
- 1 teaspoon thyme -- minced
- pinch sage -- rubbed
- pinch oregano -- minced
- pinch marjoram -- minced
- pinch celery salt
- 1/2 teaspoon white pepper
- 1 teaspoon kosher salt
- 1/2 teaspoon tarragon -- minced
- 1 1/3 tablespoons paprika
Puree' all ingredients except butter and parsley. Beat this mixture
into the butter along with parsley until fully incorporated. Make
into rolls and freeze or refrigerate depending on when needed.
This butter is most excellent on grilled steaks, can also
be incorporated into sauces.
