Grecian Style Beef Salad
Salad
- 2 pounds Dakota Beef Certified Organic roast beef, cooked and slivered
- 1 green bell pepper, seeded and sliced lengthwise
- 1 red bell pepper, seeded and sliced lengthwise
- 1 red onion, sliced and separated into rings
- 2 cups Kalamata olives, pitted and sliced in half
- 1/2 cup green olives, pitted and sliced in half
- 8 ounces feta cheese, crumbled
- 2 jars (6 ounces) marinated artichoke hearts drained, and diced (reserve liquid)
- 1 cup fresh minced parsley
Dressing
- Reserved liquid from artichoke hearts and enough olive oil to make 2/3 cup
- 1/3 cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon basil
- 1 teaspoon oregano
- 1/2 teaspoon tarragon
- Salt and pepper to taste
In a large bowl, combine beef strips, peppers, olives, feta cheese, artichokes and parsley.
Mix dressing ingredients together well, then pour over salad and marinate overnight before serving.
