Grecian Style Beef Salad

Salad

  • 2 pounds Dakota Beef Certified Organic roast beef, cooked and slivered
  • 1 green bell pepper, seeded and sliced lengthwise
  • 1 red bell pepper, seeded and sliced lengthwise
  • 1 red onion, sliced and separated into rings
  • 2 cups Kalamata olives, pitted and sliced in half
  • 1/2 cup green olives, pitted and sliced in half
  • 8 ounces feta cheese, crumbled
  • 2 jars (6 ounces) marinated artichoke hearts drained, and diced (reserve liquid)
  • 1 cup fresh minced parsley

Dressing

  • Reserved liquid from artichoke hearts and enough olive oil to make 2/3 cup
  • 1/3 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1/2 teaspoon tarragon
  • Salt and pepper to taste

In a large bowl, combine beef strips, peppers, olives, feta cheese, artichokes and parsley.

Mix dressing ingredients together well, then pour over salad and marinate overnight before serving.
