DAKOTA NY Pepper Steak

Ingredients

  • 4 - 8 ounce DAKOTA Organic NY strip steaks
  • 1 ounce butter -- clarified
  • 1 cup pepper steak sauce base -- See Recipe
  • 4 tablespoons black peppercorns -- crushed
  • kosher salt -- to taste
  • 1 ounce brandy

Season steaks and rub in 1 tbl peppercorn on to each steak.
In a heavy bottomed skillet sear steaks on both sides to desired
doneness, remove and reserve on warm platter. Pour off fat from pan,
and deglaze with 1 oz brandy. Add pepper steak base and cream,
reduce to desired consistency, spoon over steaks.

Enjoy with a nice chardonnay or red that is not too tannic, the
peppercorns will make the tannins in the wine HUGE. If you enjoy
getting hit in the face with a punch, have a nice big Cabernet with
this!
