Caramelized Soy Worcestershire Glaze

Ingredients
- 3/4 cup sugar
- 1/4 cup corn syrup
- 1 cup soy sauce, low sodium
- 1 cup Worcestershire sauce
- 4 cloves garlic
- 1/2 cup olive oil
- 4 each peppercorns
In a heavy bottom sauce pan add sugar, corn syrup, and 1/4 cup
water, bring to a boil and allow water to evaporate. At this point the
temperature of the liquid sugar will rise quickly. As syrup begins to
turn a light golden brown toss in your garlic cloves and peppercorns.
Allow syrup to turn a deep brown, remove from heat and add soy,
and Worcestershire.(Careful, adding liquid to hot caramel will cause
liquid to boil rapidly.) The liquid will stop the caramelazation of the
sugar.
Return mixture to heat and dissolve sugar into the soy mixture. Boil
this down by half to form a light syrup. Cool. Strain out garlic and
peppercorns, return garlic to mixture and put in blender. Emulsify in
the olive oil.
I like to keep this in a squeeze bottle a drizzle over grilled meats
and mushrooms!
